Indian Beef Mango Kebabs



Ingredients

1 Tablespoon minced fresh garlic

1 Tablespoon minced fresh ginger

2 Tablespoons Maharajah curry

juice of 1 lemon

½ cup tomato juice

½ cup red wine

2 Tablespoons pomegranate molasses

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon ground cardamom

1 teaspoon cayenne pepper

salt to taste

cubed beef

cubed fresh mango

Preparation

Mix all ingredients together, allow flavors to blend. If using wooden skewers, submerge in water for at least and hour. String skewers with alternating cubed beef, mango chunks, and any other vegetables you wish. Pour marinade over kebabs and let flavors soak in, for at least an hour. Grill over medium heat and enjoy.
