Thai Coconut Cheesecake



Ingredients

1 1/2 pounds Philly cream cheese, softened
1/2 cup peanut butter
2 large eggs
1 ounce Thai Coconut blend

Preparation

Preheat oven to 350. 

Spray 6" spring pan with cooking spray and press 1/2 cup Ritz cracker crumbs into bottom.  Set aside.

Blend cream cheese, peanut butter and eggs until smooth.  Add Thai Coconut blend and mix thoroughly.  Pout into prepared pan and bake in preheated over for 45-55 minutes.  Let cool and serve at room temperature. 

Serve this appetizer dish with a mild flavored cracker or bread.
