1 Pound fresh cranberries
1 Cup white sugar
½ Cup brown sugar
1 Orange with peel
½ TSP grated fresh ginger
Small pinch of salt (optional)
1. Cook both types of sugar with half the cranberries, ginger, salt, and the zest from the orange in a saucepan over medium heat until it starts to bubble and the cranberries pop. Let cool.
2. Put remaining cranberries in food processor with the flesh of the orange and pulse till combined. This mixture will be chunky, not smooth. Add the cooked ingredients to the food processor and pulse till combined, then serve!
