Crackle Top Molasses Cookies


These soft molasses cookies are spiced with ginger, cinnamon, and cloves. They're chewy in the middle, and crispy on the edges – a perfect cookie for the holidays!

2/3 c. vegetable oil
1 c. sugar
1 egg
1/4 molasses
2-2/1/4 c. flour
2 t. baking soda
1 t. vietnamese cinnamon
1 t. ginger
1/4 t. cloves
1/3 c. diced crystallized ginger
infused clove or cinnamon sugar (for rolling)


1. Combine oil and sugar
2. Beat in egg
3. Stir in the remaining ingredients till well mixed
4. If needed add a little more flour
5. Shape into 1 inch balls and roll in infused clove sugar or infused cinnamon sugar (both available from Spice Merchants)
6. Bake at 350 till golden and tops are crackled (roughly 12-14 min)

Makes 45 cookies
