Moroccan Turkey Tangine



Ingredients

1 T. olive oiil
1 large red onion
1 1/4 lb boneless turkey breast
1/4 t. salt
1 t. cumin
1 t. turmeric
1/2 t. cinnamon
1 butternut squash but into 1 inch cubes
1 Granny Smith apple
1 large tomato
1- 19 oz can of chickpeas-rinsed
14 oz can of reduced sodium chicken broth
4 dried figgs
1/4 cilantro 

Preparation

1.  Cook the onon about 5 minutes in the oil
2.  Add Turkey and brown 5 minutes
3.  Add all the spices and cook about 30 seconds
4.  Add- squash,apples,tomato,chickpeas,figs and broth and bring to a boil
5. Reduce and cover and simmer 35 minutes
Garnish with Cilantro
