Lentil Dal



Ingredients

2 T olive oil

1 c. chopped onion

1 T peeled fresh ginger, minced

1 t. cumin seeds

1/2 t. crushed red pepper flakes

1 t. Maharajah Curry Powder

4 garlic cloves, minced

2 c. chopped cauliflower

2 c. chopped tomatoes

2 1/2 c. water

1 c. dry lentils

1 T. fresh cilantro

4 T fresh lime juice

1/2 Grey sea salt

6 c. Basmati rice

Preparation

1. Heat oil and saute onions and next 5 ingredients,

2. Add cauliflower and tomatoes, saute 2 minutes

3. Stir in water, lentils and bring to a boil

4. Cover, and let simmer 35 minutes

5. Add fresh Cilantro and lime juice and salt

Serve over cooked rice

Makes 6 servings
