1 lb lean ground beef
1/4 cup - 1/2 cup brown sugar
1/2 cup reduced sodium soy sauce
1 tablespoon sesame oil
1 1/2 teaspoons minced garlic
1/2 teaspoon minced ginger
1/2 cup cut leeks
1/2 cup carrot
1/2 cup red pepper cubed
2 tablespoons Raspberry Chipotle Blend
salt and pepper to taste
1 bunch green onions sliced
Heat a skillet over medium-high heat. Cook the ground beef in sesame oil until thoroughly cooked. Add garlic and cook for several more minutes, making sure not to burn the garlic.
Drain the fat if there is any.
Add the brown sugar, soy sauce, ginger, Raspberry Chipotle Blend, salt and pepper. Bring to a simmer and let cook for 5 - 7 minutes, stirring frequently.
Serve over steamed rice and top with plenty of green onions.
