Creamy Avacado Soup



Ingredients

  • cup sour cream
  • 1/4 teaspoon ground chipotle chile pepper
  • 2 tablespoon olive oil
  • 1 large onion, chopped (about 1 cup)
  • 1 clove garlic, minced
  • 6 cups chicken broth
  • 2 tablespoon chopped fresh cilantro leaves
  • 2 tablespoon lime juice
  • 4 avocados, pitted, peeled and cut into cubes (about 5 cups)
  • 1/4 teaspoon ground white peppercorn
  • 1/4 teaspoon Murray River Sea Salt

Preparation

Stir the sour cream and chile pepper in a small bowl.

Heat the oil in a 6 quart saucepot over medium heat. Add the onion, salt and pepper and cook for 4 minutes.

Add the garlic and cook for 30 seconds. Add the broth, cilantro, lime juice and avocados into the saucepot.

Heat to a boil.

Using an immersion blender, puree soup until smooth.

Top each bowl of soup with about 1 tablespoon of the sour cream mixture.
