Saffron consists of the dried stigmas of the saffron crocus. It takes about 80,000 flowers to yield 5 pounds of stigma, all of which must be hand-harvested, this is why saffron is the costliest spice in the world. For most dishes, a few threads of saffron is infused in liquid, which imparts a gold color and wonderful exotic flavor. Saffron is commonly used in Indian cooking, but goes well with a variety of cuisine.
This saffron comes directly from Afghan farmers in a farm-to-table style partnership. Of note, Afghan saffron has been rated #1 from 2013-2015 by the International Taste & Quality Institute.
