Middle Eastern Couscous, also known as Israeli Couscous, is made from wheat flour and has a nutty, light flavor. Like traditional Moroccan couscous, it is toasted or "puffed" to about the size of a peppercorn. The large size of this couscous allows it to absorb flavors excellently. It's wonderful served with marinated broiled vegetables or as a side dish to meat and poultry. Warm or chilled, it makes a delicous salad! Great as a substitue for rice in curries and stir-fries.
To prepare bring 4 cups of water to a boil and add 1 cup of couscous. Simmer for 8 minutes until tender yet al dente. Strain. One cup dry couscous yields 3 cups cooked.
Ingredients: Durum Wheat Semolina.
