White Teas

White tea comes from the delicate buds and baby leaves of the camellia sinensis plant. These buds & leaves are allowed to wither in natural sunlight before they are processed to prevent oxidation, preserving the characteristically light flavors of white tea. With such little processing done, the leaves are able to remain closest to their natural state; containing high levels of antioxidants. White tea is said to be known as having anti-bacterial and antiviral properties, as well as improving cardiovascular function. As with green tea, white tea also needs some careful preparation when steeping. The delicate young tea leaves can be easily scorched with hot water. We recommend that you bring water to a boil (212 degrees), then remove from heat and bring water down to 158-167 degrees or at most 160-70 degrees. Use 2 teaspoons for every 8-12 ounces and steep for 7-10 minutes. You may wish to start with an initial short steep of 1-3 minutes then gradually increase steep time to find what steep length you prefer. Enjoy!
